Grated Veggie Salad

You will need:

  • 1/4 cup grated carrot
  • 1/4 cup grated zucchini
  • 1/4 cup thinly shredded fennel bulb
  • 1/4 cup thinly shredded lettuce
  • Rock salt to taste (optional)
  • 1 pinch black pepper
  • 1 tsp lemon juice
  • 1 tsp extra-virgin olive oil
  • 1 tsp finely chopped fresh parsley

Steam carrot and zucchini for 5-7 minutes. Drain. Combine carrot, zucchini, fennel, lettuce and parsley.

Prepare the dressing by whisking together the salt, pepper, lemon juice and olive oil.

Fold dressing into the salad and mix well.

Enjoy at room temperature.
