Green Beans and Asparagus Tips Salad for Vata

You will need:

  • 1/2 cup diced green beans
  • 1/2 cup asparagus tips
  • 1 tsp extra-virgin olive oil
  • 1 tbsp toasted pine nuts
  • 1 tsp lemon juice
  • Fresh ground black pepper to taste
  • Rock salt to taste
  • 1 tsp fresh chopped tarragon
  • 1/2 tsp lemon zest

Steam green beans and asparagus tips until tender but not mushy.

In a bowl, whisk together the olive oil, lemon juice, tarragon, lemon zest, salt and pepper.

Blend together the vegetables and the dressing and garnish with the toasted pine nuts.

Serve warm or at room temperature.
