Walnut-Avocado-Mango Salad

You will need:

  • 1 avocado, diced into 1/2" cubes
  • 2 walnuts, soaked in warm water for 30 minutes, then roughly chopped
  • 1/2 cup diced mango
  • 1 tsp chopped fresh basil
  • 1/2 tsp minced fresh ginger root
  • 1 tbsp crushed pineapple in a little juice
  • 1/2 tsp lemon juice
  • Fresh ground black pepper to taste
  • Rock salt to taste
  • 1 tsp walnut oil

Combine the mango, walnuts and avocado in a bowl.

In another bowl, whisk together the walnut oil, crushed pineapple with juice, lemon juice, basil, ginger, salt and pepper.

Pour the dressing over the salad and blend gently.
