Garbanzo-Avocado-Basil Salad

You will need:

  • 1 cup garbanzos, cooked until tender
  • 1 cup diced avocado (ripe but not mushy) (prepare and add just before serving)
  • 1/2 cup diced green beans, steamed for 3-5 minutes (1/2" dice)
  • 1/2 cup small-sized broccoli florets, steamed for 3-5 minutes
  • 1 tbsp shredded fresh sweet basil
  • 1 1/2 tsps. extra virgin olive oil
  • 1 tsp lemon juice
  • 1/4 tsp dry-roasted ground cumin
  • 1/4 tsp ground fennel
  • 1/4 tsp freshly cracked black pepper
  • Sea salt to taste

Combine the olive oil, lemon juice, cumin, fennel, black pepper and salt in a salad bowl and whisk until blended.

Add the garbanzos, green beans, basil and broccoli and toss to mix. At the end, gently fold in the diced avocado. Serve immediately.
