Cabbage-Pumpkin Seed Salad

You will need:

  • 1/3 cup finely shredded green cabbage
  • 1/3 cup finely shredded red cabbage
  • 1/3 cup grated carrot
  • 1/3 cup cooked garbanzo beans
  • 1 tablespoon roasted pumpkin seeds
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • A few flakes of red chili pepper
  • Rock or sea salt to taste
  • Fresh ground black pepper to taste
  • 1 tbsp chopped cilantro

Steam the cabbage and carrot for about 5 minutes.

Combine the cabbage, carrot, garbanzos and pumpkin seeds in a bowl.

Make the dressing by mixing together the olive oil, lemon juice, chili pepper flakes, salt, black pepper and cilantro.

Pour the dressing over the salad and toss gently to coat.
