Carrot-Daikon
Raita for Vata
You
will need:
- 1
tbsp grated carrot
- 1
tbsp grated white daikon radish
- 1/2
tsp minced fresh ginger root
- 1/2
cup fresh plain yogurt
- 1
large pinch fresh ground black pepper
- 1
tsp ghee (clarified butter)
- 1/2
tsp cumin seeds
- 1
pinch asafetida
- 1
pinch fenugreek powder
- Rock
salt to taste
- 1
tsp chopped fresh cilantro
Whip
the yogurt until smooth and creamy.
Fold
in the carrot, radish, ginger, pepper, salt and cilantro.
Heat
the ghee in a small skillet.
Add
the asafetida, cumin seeds and fenugreek and stir briefly to release
aroma.
Pour
the ghee-spice mixture over the raita and mix well.
Serve
at room temperature.
