Sautéed Okra

You will need:

  • 1 cup cut okra (chop each okra into 5-6 pieces)
  • 1 tbsp ghee (clarified butter) or olive oil
  • 1/2 tsp turmeric
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • Rock salt to taste
  • 1 pinch hing (asafetida)
  • 1 tsp cumin seed
  • 1/2 tsp sweet paprika
  • 1 tsp chopped fresh cilantro

Heat the ghee or oil in a non-stick pan. Add asafetida and cumin seeds. When the seeds turn a rich brown and fragrant, add the okra.

Sauté the okra, turning occasionally, until slightly brown at the edges and slightly crisp. Add the salt and powdered spices and stir well to coat the okra with the spices.

Garnish with the cilantro and serve warm with a whole grain and a lentil dish.

Note: Dry washed okra by patting with paper towels before you cut. Use a clean dry knife.
