Mixed Vegetable Sauté

You will need:

  • 1 small white daikon radish, peeled
  • 1 medium zucchini
  • 1 medium carrot, peeled
  • 1 fennel bulb
  • 6-8 almonds, soaked, blanched and slivered
  • 2 tablespoons ghee
  • 1-2 tablespoons water
  • Salt and pepper to taste

Wash and slice all the vegetables thinly.

Heat the ghee in a large flat pan or wok.

Add almonds and sauté briefly.

Add the vegetables, stir for a couple of minutes, then cook, covered, on medium heat until fork tender. You will need to lift the cover and stir every couple of minutes to ensure that the veggies do not stick. If they do, add a few drops of water and stir.

Season and serve hot with a grain of your choice.

(Serves 2-3 as a side-dish)
