Sautéed
Bitter gourd
You
will need:
- 1
medium bitter gourd, trimmed, cut into half, deseeded and sliced
thinly
- 1
tsp recommended spice mix
- 1-2
tablespoons ghee
- 1
tsp whole cumin seeds
- 1
tablespoon fresh yogurt
- Rock
salt to taste
- 1
tablespoon chopped fresh cilantro
Blanch
the bitter gourd slices in boiling salted water for 3-4 minutes.
Drain.
In
a large pan or wok, heat the ghee till it is clear.
Toss
in the cumin seeds and stir briefly, being careful not to burn
the seeds.
Add
the bitter gourd, yogurt, spice mix and salt, mix well and sauté
for about 5 minutes, till the gourd is fork tender.
Remove
from heat, garnish with the cilantro and serve hot with flatbreads
or a grain of your choice.
(Serves
2 as a side-dish)
